But here's a thing. Once this card is destroyed and re-Summoned, what's its DEF stat? Will the card continue to be considered Fusion Summoned at that point?

the defense will always be the DEF of metal reflect slime when it was fused ith revival jam...it will still be considered fusion summoned

Why not make its DEF a static 3000, then?
