Hmm, last spring? There was quite a bit of good stuff but I guess the absolute must watches (in my personal opinion) are:

 

Spring 2014:

NGNL

Ping Pong

 

Summer 2014:

Barakamon

Aldnoah.Zero (I didn't like it but a lot of people did so I guess it could be considered a 'must watch')

Tokyo Ghoul*

SAO II (again I never really liked SAO but I don't know if it's your thing)

Zankyou no Terror

 

Autumn/Fall 2014:

Parasyte the Maxim

Shigatsu wa Kimo no Uso

Shirobako

Psycho-Pass 2 (I dropped after episode 1 but I guess it was fairly popular)

Fate/stay night: Unlimited Blade Works

 

Winter 2015:

Aldnoah.Zero 2 (obviously only if you liked the first)

Death Parade

Durarara!!x2 Shou (again only if you enjoyed the first season)

Assassination Classroom

 

 

 

*If you enjoyed this I recommend that you read the manga for the full experience and stay away from the second season (Root A) as overall it was just a butchering of the manga.

 

Probably forgot about a bunch of stuff but those are most of the highlights from the recent seasons.
