So why not get a group of people together on a Skype call, play games together, and record it? On that note, games that don't mess up for everyone when someone disconnects for whatever reason would be the best choice. I'd be down to play CounterStrike, DayZ, Civ 5, Minecraft, Hearthstone, CardsAgainstHumanity, and a majority of the s*** on Steam. The two bolded games would be my first choices. But I think the main factors here would be availability and computer hardware, cause some people are several hours off-sync with others and some people don't have the right computers to run certain games, maybe even both.
