Christmas Baking

So with Christmas/Yule/Hanukkah/Mithrafeast/Saturnalia coming up, I've been in a baking mood.:3

Well, I figured I HAD to share this recipe for cinnamon stars. There are many, but this one may be the best I've tried so far. (I’m using grams instead of cups as measures because im gay irl we do it this way here, but 100 g equals about half a cup.)

- 200 g marzipan

- 4 egg whites

- 300 g confectioner’s sugar

- 100 g sugar

- 4 tsp cinnamon

- 200 g ground hazelnuts

- 200 g ground almonds

- 180 g confectioner’s sugar

- 1 tsp lemon juice

 

First of all, knead the marzipan with 1 egg white, then add 300 g confectioner’s sugar, regular sugar, cinnamon and 2 egg whites. Add the hazelnuts and half of the almonds and knead until you get smooth dough.

 

Then spread the remaining almonds unto your working space, roll out the dough and cut out stars. Line the tray with baking paper and put the stars on it.

 

Pre-heat the oven at around 150-175° C (intensity depends on your oven).

Take the remaining confectioner’s sugar and mix with the lemon juice and left-over egg white until you get a thick, smooth icing. Then cover the cookies with the icing.

 

Bake for about 10 minutes until the icing turns slightly darker (I get the best results by using the second lowest rack, but see what works best for you).
