It's basically a feeling or emition they represent which is reflected in their abilities so if you're struggling come up with their abilities first and aee if you can figure out their nature based on that...

Or if you're really stuck there are some examples of canon Witches here.

Well I'm done for the moment, might go over it later and change a few things though.

Name: Alessa

Age: N/A

Gender: Female

Species: Witch

Will become a Puella Magi?: N/A

Wish: N/A

Nature: Suffering

Description: Alessa’s appearance is that of an almost entirely mummified female figure wrapped in blood stained bandages with her arms crossed over her chest and her legs bound together, her face is covered by a heavy blank iron mask with long dark hair spilling out of the back and going down to her hips, a set of 3 black and torn looking wings extend from her back with a massive wingspan of about 10 feet, resembling burnt paper. Her body is suspended in an iron birdcage and wrapped in spiked chains.

Personality: Alessa is obsessed with causing pain and suffering to others and harbours a severe hatred for Puella Magi, going so far as to actively seek out Puella Magi or those with the potential to become Puella Magi and causing them as much pain as possible before she kills them. Throughout her Barrier she can be heard spouting random Latin phrases with similar phrases written on the walls, the few times she’s not speaking Latin will be to curse those she traps in her barrier.

Bio: Alessa was once the daughter of a single mother who began to grow crazy in her old age, believing her daughter to be a witch. Eventually it reached the point where she attempted to exorcise her daughter however an accident caused their house to catch fire. Both of them survived and the girl’s mother was committed to an insane asylum while the girl herself was admitted to the hospital, unable to move and with severe third degree burns all over her body that caused her terrible pain. It was then that the creature known as Kyubey appeared to the girl, offering her a contract to become a Puella Magi in order to heal her body, the girl accepted wishing to be fully restored and never to feel pain ever again. The girl began to fight witches with enthusiasm, believing that despite her ignorance to the events she was proving to her mother that she wasn’t a witch by destroying real witches and saving lives, however a while into her career she witnessed another Puella Magi become a witch and quickly learned of the true nature of witches, realizing that she had in fact become what her mother had accused her of being. The girl snapped and went on a rampage, viscously killing other Puella Magi and failing to cleanse her Soul Gem and eventually succumbing to her insanity and becoming the Witch Alessa.

Weapon: Alessa uses the chains wrapped around her as extra appendages, using them to attack her prey from a distance or constrict them. Each of Alessa’s chains have a bladed weapon such as a hook or a knife on the end of it as well as small spikes embedded in each of the chain links. She is also capable of using the instruments found within her barrier to attack her victims.

Powers:
Alessa’s barrier exists in 3 levels; the first level bears the appearance of an abandoned hospital with walls too high to see the ceiling, aging medical equipment can be found scattered around the place including wheelchairs and gurneys, several rooms fill this level and in some the bodies of Alessa’s victims can be found either locked in cages or chained down to a bed or wheelchair. The seconds level is found directly beneath the first level and is a maze of twisting metal corridors filled with various rooms, each one bearing instruments of torture the most common ones being red hot pokers and furnaces. At the centre of the second level is the third level, a huge iron chamber bearing a similar appearance to a cathedral with 4 stain glass windows at each corner of the room, first depicting the silhouette of a girl in a dress first speaking to an angel, then fighting a horde of demons, crying over a grave and finally being eaten by what looks like Alessa herself. Within her barrier, Alessa has the ability to control the devices within it, sending the objects to attack any she traps within or to Sheppard them closer to her lair.

Several of these can be found in the first level of Alessa’s barrier. Their job is to tend to the level’s other ‘occupants’ and to ensure that any fresh victims are stored neatly.

Found in the second level of Alessa’s barrier, Valtiel’s job is to guide victims towards the centre where Alessa lies waiting.

Name: Mathilde
Gender: Female
Species: Witch
Nature: Shame
Description: A massive fleshy blob about 20 feet tall and equally rotund. Her body is covered in the tattered, stained remains of some sort of school girl's uniform, but she also has mouths covering her body at various intervals, which are filled with sharp teeth. She has long black hair covering her face, which is no longer a face, but a bloody, throbbing pulp where her face should be. Her arms and legs are stubby and shaped like barrels, with stumps that have mouths instead of hands or feet. Anyone that has seen the show Mathilde's human form used to be in might recognize her as a parody of her character.
Personality: It is virtually impossible to tell what kind of personality Mathilde has do to the loss of her face. But judging from the facts, she seems to be immensely unhappy with her current situation.
Bio: When Mathilde was human, her mother was a popular seiyu, and her father a prominent kabuki actor. She was determined to be just as great as her parents, so she made a contract with Kyubey to become popular. However, Kyubey somehow managed to get her on a comedy show where she became fondly remembered, but in a very negative light, for a fat schoolgirl that created incredibly awkward moments. Eventually, she became very self-conscious of her image, which, combined with the stress of being a Puella Magi, resulted in her descending into Witchdom. Now, she is a Witch, lurking in her Barrier.
Weapon: Stretchy, slime-covered tongues that extend from her mouths, and sharp teeth.
Powers: Mathilde is highly resilient to damage. Her Barrier is some sort of cluttered, messy backstage, while the center is a giant stage with no walls, save for a shadowy area surrounding the stage that seems to have an audience, though any attempts to reach the audience are futile. Above the stage are a ton of lights that blind and distort the Puella Magi, but Mathilde, being blind, is unaffected. Her minions, Johann, are skinny humanoids in business suits with their heads being a grinning mouth that constantly laughs. Their arms are always rigid, with their hands always pointing.

You don't seem to understand the concept of a witch representing a thought, not a person, do you?
There's not understanding the concept, and then there's not finding the right bloody pic.

There's a difference <_<

Stalfos, there is this wonderful concept called "imagination".
It allows someone to be able to write the description of their character, instead of being confined to the constaints of a picture.
Why don't you give that a go?
