Phoenixes have also existed in Greek mythology as well, which is what they were going for, in terms of origins.
Mostly, because quite a lot of things in the MLP;FiM universe are all Greek/Roman/etc themed.
Cerberus, Tartarus(Hades), Manticores, Hydras, Iron Will is a minotaur, hell, even Cloudsdale was built like a gladiator colosseum.
