But isn't desiring Rarity in itself a form of greed? Or would that fall under lust?

Also, I'll probably regret saying this, but it appears that there may be some shipping-bait included for a pair other than Rarity x Spike.

No, because Rarity was the Element of Generosity. It's because she devotes her time to create clothing and help others with their style, hygiene, etc. You're talking about the corrupted Rarity.

Him reverting had little, if anything, to do with desiring Rarity. It was the memory of him giving up something he greatly wanted (the gem) to someone he cared for who also wanted it, but for a permanent function, as he was originally planning to eat it. The fact she said and emphasized that he was extremely generous and obviously treasured it triggered the memory that he's a generously natured individual, not a greedy hoarder.

Although early on, I actually thought Rarity had unfairly manipulated him into giving it to her, especially since I had read the comment that she seemed to know he had a crush, so calling him "Spikey-wikey" (an affectionate nickname she has never used before) and her way of asking seemed a bit underhanded for the "Element of Generosity" pony. Fortunately, she is shown to truly be treasuring it and is grateful for the generosity, so I was probably reading too deeply.
