Hey, y'all! This be the recipe book, the cooking club of YCM. You can post your recipes and other food related things here! Ironic thing is, your club leader, Xion, is 11, and can't even work in the kitchen! Join if you enjoy cooking or want to share some recipes.

BBQ Chicken Burgers

 

1 Lb. Ground Chicken(You can ground your own chicken too)

2 tbsp. Lemon Juice(Optional)

1/8 can Whole Kernel Sweet Corn

3 slices Pre-cooked microwavable bacon(Chopped. Cooks in 10-30 seconds)

1/2 cup BBQ Sauce(Homemade or store-bought. Doesn't matter)

8 leaves Lettuce(Can be store-bought. 2 for each burger)

2 Eggs

1 cup Bread Crumbs(Can be made yourself)

 

Serves 4 people.

Open package of Ground Chicken and dump it into a large bowl(If store-bought). Grind 1 lb. of boneless, skinless chicken breasts into large bowl(If made by hand). Add eggs, bread crumbs, corn, bacon, lemon juice(Unless you don't want to), and BBQ Sauce. Leave lettuce to the side for the end.

Use gloves and mix together with hands. When fully mixed, let stand for 2 minutes. Make large patties and place 2 at a time on a griddle(Or all of them on a grill if you have one). Cook on medium heat for 5-10 minutes on each side. When finished, place on bun that could have any condiment on it(Mayonnaise, ketchup, etc.), even some more of the BBQ Sauce you used for more flavor. Cool for 2 minutes and place 2 leaves of lettuce on each burger. Enjoy!

Crumbed Lamb Cutlets

 

Ingredients:

 

8 Lamb Cutlets

Lemon Juice (to taste(optional))

Salt and Freshly Ground Black Pepper (to taste)

Plain Flour (for coating)

1 Egg (beaten with one tablespoon of water)

Breadcrumbs (for coating)

Olive Oil (for frying)

Parsley (chopped(to garnish))

 

 

Serves 4

Trim skin and excess fat from cutlets and flatten with the side of a meat mallet (unless your butcher has already done this). Lay cutlets on a plate, sprinkle with a little lemon juice (if using) and season with salt and pepper. Let cutlets stand in refrigerator for 1 hour.

To finish cutlets, coat with flour then dip in beaten egg and finally breadcrumbs, pressing them on firmly.

 

Pour enough oil to be 5 mm (1/4 in) deep in a frying pan and heat. Fry cutlets over a moderate heat for 4-5 minutes on either side, then lift them out and drain them on absorbent paper.

 

Serve immediately, while still crisp and piping hot, garnished with parsley.[/align]
